Cacao Chocolates
Ingredients
1/2 lb Cacao Paste
1/2 lb Cacao Butter
Coconut Nectar/Coconut Sugar - to taste
1 TSP Vanilla
Celtic or Sea Salt
1/2 TSP Maca Powder (this recipe uses gelatanized)
Double Boiler
Spatula
Knife and Cutting board
Chocolate molds - silicone are best set on a baking sheet
Parchment Paper
Instructions
Cut up the paste and butter into smaller pieces, this equals less time in the double boiler
In a double boiler, melt the cacao paste and cacao butter on low until fully melted and combined
Turn heat off, and add coconut nectar, or coconut sugar, sweeten to taste, mix thoroughly.
Add Vanilla and Maca powder and mix thoroughly
Be sure to at all processes to get NO water in your chocolate mix, this will not let the chocolate set.
In your chocolate molds, sprinkle crushed Celtic salt in the bottom, then pour your slightly cooled cacao mixture into the molds.
Put in fridge to set for 2 hours, this allows everything to fully set.
Keep in fridge if you plan to eat right away, or this stores well in the freezer as well.
Use parchment paper to separate the layers of chocolates
Remember to never boil your cacao mixture, this will result in a burned taste
